Cowboy's Favorite Potato Salad

A creamy potato salad that is filled with bacon, cheese and green onions just like your favorite toppings on a loaded baked potato. This is a hearty potato salad worthy to be on the table of the hungriest of cowboys. Enjoy!!

8 large potatoes (Yukon Gold/Russet Potatoes)
1 1/2 cup Ranch dressing
4 oz sour cream (1/2 tub)
8 oz bag shredded sharp cheddar cheese
1 cup freshly chopped green onion tops, divided
8 strips of bacon, cooked and crumbled
4 eggs boiled and coarsely chopped
1 diced stalk of celery (optional for added crunch)
Salt & pepper to taste

(Time Saver: You can use 2 pkgs of Hormel or Publix bacon pieces if you don't have time to cook the bacon- make sure you get pieces and not bits)
Peel and cube potatoes. Boil in water until potatoes can be cut with a fork (about 15-20 minutes). Don’t cook them too long or you’ll end up with mashed potatoes. While the potatoes are boiling, mix together the ranch dressing, sour cream, cheddar cheese, celery and half the chives. Add salt and pepper to taste. After the potatoes are boiled, drain them and let them cool for a bit. Peel your eggs and coarsely chop them, (Time Saver: I boil my potatoes and eggs in the same pot at the same time) Then cover and fold in the sour cream mixture and three-quarters of the bacon. (reserve some bacon & cheese , and green onions for garnish) Serve & Enjoy! You can serve this warm or chilled. After all, you eat a baked potato warm – so that makes sense!
