Cranberry Bread

Sweet/tart bread

2 cups flour
1 cup granulated sugar
1 teaspoon baking soda
½ teaspoon table salt
1 egg
1 teaspoon orange zest
¼ cup melted shortening
3 tablespoons white vinegar and water to make 2/3 cup
1 cup nuts (I used pecans, but I bet she used walnuts)
1 cup raw cranberries
Preheat oven to 350 degrees. Sift the dry ingredients together in a medium bowl. Set aside Combine the egg, orange zest, melted shortening, vinegar and water. Add the nuts and cranberries. Blend in the dry ingredients. Put in a well-greased loaf pan. Bake 45 minutes to 1 hour Test. Until a wooden skewer inserted comes out clean When cool enough to handle turn onto a baking rack to cool completely. Wrap in foil and allow to sit at least a day before serving. Freezes well
