Creamy Cauliflower-Potato Soup (gluten-free!)

A perfect (and tasty!) way to use vegetables. A creamy, lower-fat soup that also freezes well.

Approx 3 pounds of potatoes (red, yellow or brown work well), rinsed, chopped into 1-inch cubes
2 heads of cauliflower
1 large onion, chopped finely
2 Tbsp butter
6 cubes of chicken bouillon
3 Tbsp of flour (gluten-free - use rice flour)
1 cup whole milk
salt and pepper to taste

Garnishes:
chopped green onions
chopped and cooked bacon pieces
pre-shredded cheese
sour cream

Who doesn't love having a good Caesar salad! However, having Caesar salad in restaurants is never a healthy choice. As, it is always loaded with excess fats and calories. I have prepared an entirely healthy homemade Caesar salad in a tortilla bowl that rivals that of any restaurant.

Toss with the crisp lettuce, drizzle with the guilt-free flavorful dressing and finally top with croutons and cheese for the perfect main course!
