Creamy Potato Soup

Soup, soup and more soup has been on my mind since the weather has been so cold lately. There truly is nothing better than a hot bowl of soup when it is freezing cold outside! When I come home from work, I just want to wrap up in a warm blanket and eat a yummy bowl of soup! I got this recipe years ago from a co-worker who had made it for a potluck lunch. What I love about this soup, is that you can pretty much add anything you like!

1/2 cup butter
3 celery stalks (chopped)
3 green onions (chopped)
3 large carrots (grated)
2- 14 1/2 oz. cans chicken broth
3-10 3/4 oz. cans Cream of Potato Soup
1 cup frozen hashbrowns
10 oz. cheddar cheese
1 cup sour cream
1-10 3/4 oz. soup can of milk
Salt and Pepper to taste.
(Can add broccoli, chicken, bacon, mushrooms, or the kitchen sink if you like!)

1 cup frozen hashbrowns
10 oz. cheddar cheese
1 cup sour cream
1-10 3/4 oz. soup can of milk
Salt and Pepper to taste.
(Can add broccoli, chicken, bacon, mushrooms, or the kitchen sink if you like!)
Saute carrots, celery and onion in butter in a large soup pot.
Add hashbrowns and chicken broth and simmer for 15 minutes.
Add soup, milk, and cheese.
Heat thoroughly, stirring often.
