1 tbsp olive oil
1 red onion chopped
1-2 garlic cloves finely sliced
1/2 teaspoon cayenne pepper
1 tsp granulated sugar
1 tsp good quality balsamic vinegar
3 cups chicken stock (750ml)
1/2 cup heavy cream (120ml)
1 tbsp chopped fresh basil
