Crispy Chicken Cordon Bleu

Chicken Cordon Bleu used to be my requested birthday meal every year when I was younger. I love it! This is a family recipe that I've tweeked a little and its so easy to make!

6 pieces of chicken, pounded and flattened out
12 pieces of sliced deli ham
Swiss cheese
3 eggs
1 1/2 cups of panko bread crumbs
1 can of cream of chicken
1 cup sour cream
1 tsp lemon juice
salt and pepper

Start by placing your chicken in between two pieces of saran wrap and pounding it out till it's nice and flat. ( I just use a frying pan to pound it out.) Next, salt and pepper the chicken and place 2 pieces of ham down and then the amount of Swiss chesse you like, on top of that ( 1 slice or 2). When that's all done roll up your chicken carefully, making sure everything is secure and not falling out and take a couple toothpicks to secure the chicken together so it doesn't unroll. Next, in two shallow dishes have 3 eggs beaten in one and the Panko crumbs in the other. Dip the chicken in the egg making sure you get all sides covered and then roll it in the Panko crumbs and place on a baking dish or pan that's been sprayed with cooking spray. From here you can either refrigerate till ready to cook or put it in a 350 degree oven for 40 mins. If you refrigerate it before, bake it about 10 minutes longer. When it's about 10 minutes away from being done mix the cream of chicken, sour cream and 1 tsp of lemon juice in a saucepan until it's creamy and all combined. Top each piece of chicken with some sauce and you are all good to go!
