Crispy Salmon Goujons & Mango Ginger Salsa

Crispy salmon strips covered with black sesame seeds and served on a bed of mango ginger salsa.

400g/14oz salmon fillet, cut into strips
100g/3.5oz black sesame seeds
1 egg, beaten
1tbsp corn flour
sunflower oil for frying
For the marinade:
2tbsp dried ginger
2 garlic cloves, crushed
200ml/1 cup dark soy sauce
For the mango ginger salsa:
400g/14oz ripe mango, chopped
2 red chillies, chopped
a bunch of fresh coriander, chopped
2 tbsp dried ginger
1 lime, juice only
