For the salmon:
2 pounds salmon (about 1 inch thick)
2 tablespoons coconut oil, melted
1 teaspoon lemon pepper
1 teaspoon dried dill
For the Greek orzo:
1 cup dry orzo pasta
2 tablespoons olive oil
1/2 lemon, juiced
1 clove garlic, minced
salt and pepper to taste
1 tomato, chopped (or 1 cup grape tomatoes, halved)
1/2 cup sliced olives (kalamata or black)
1/4 cup red onion, diced
1 yellow pepper, chopped
1/2 cup feta cheese, crumbled
