Crock Pot Barbeque Chicken

Delicious barbeque chicken thighs with mixed vegetables.

4-6 Chicken Thighs
Make sure chicken is not frozen. Rinse chicken with cold water and pat dry. Spray an iron skillet with non-stick cooking spray (or a non-stick skillet will work ) and put over medium high heat on top of stove. Season the chicken with salt, pepper and any other seasonings that you prefer. Sear the outside of the chicken, turning it on both sides. When completely seared, lay chicken on paper towel (or coffee filters) to soak up any access oil and do this for approximately 10 minutes. While the chicken is draining, spray your crock pot with non-stick cooking spray and then pour approximately 1 cup of barbeque sauce of your choice into the bottom of the crock pot. After the chicken is drained, gently lay the chicken thighs in the bottom of the crock pot and and then pour barbeque sauce on the top to coat the skin. Cook on low overnight and wake up to a sweet smelling barbeque!
