Crock Pot Carnitas
If you know carnitas (literally meaning "little meats") you know how delicious it is. If you know how it's prepared (with a coating of lard on top and then fried at the end) you know how fattening it is! Fret not, however, because I have a great take on carnitas that is low cal and has all the flavor you are hoping for. Even better, it's prepared in the crock pot! The possibilities are endless with this recipe. Eat it by itself with some rice and beans, put it in a taco

1 (2 lb.) pork loin roast, trimmed of fat
Salt and pepper
2 t. dried oregano
1 t. cumin
1 onion, thinly sliced
4 cloves garlic, smashed
1 jalapeno pepper, seeds removed and finely diced
Juice of 1 orange
