Crock Pot Shredded Beef Tacos

Shredded Beef Tacos have got to be one of my favorites! The best part about this recipe is that it’s made in the crock pot! Not only is it incredibly EASY, but it is soooo delicious!

2-1/2 lb. chuck roast

1 cup beef broth (I use a beef boullion cube dissolved in hot water)

1 teaspoon cumin

1 tablespoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/4 teaspoon dried oregano

1 small can diced green chiles

2 tablespoons lime juice

3 T cornmeal
3 T unsweetened cocoa powder
Pinch salt
3 eggs
1/2 c salted butter
1/2 c light corn syrup
1 t vanilla extract
1 unbaked 9-inch pie crust

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
