4 pounds Yukon Gold potatoes, peeled and cut into 1 in cubes
2 cups chicken/vegetable broth
4 cloves garlic minced or pressed
1 and ½ teaspoons salt, plus more to taste
¼ teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried rosemary
½ cup unsalted butter, cut into cubes
1 (8 oz) package cream cheese, cubed and room temperature
1 cup shredded parmesan cheese
1 (8 oz) tub sour cream, room temperature
2 cups chicken/vegetable broth
