This vegetarian fajita option might be lacking meat but does not lack flavor! This dish cooks in 4-6 hours and is perfect for throwing together at lunch to have ready after work.

1 large green bell pepper, seeded and sliced
1 large red bell pepper, seeded and sliced
1 medium onion, sliced
1 1/2 Tablespoon vegetable oil
