Crunchy Peanut Butter Muffins

75g (3oz) butter
200g (7oz) caster sugar
150g (5oz) peanut butter
2 ripe bananas, peeled and mashed
4 eggs, beaten
250g (9oz) self raising flour
12 muffin cases and a 12-cup muffin tray
Preheat oven to 180C (350F, Gas Mark 4) and line the muffin tray with the paper cases. 1. Cream the butter and sugar 2. Stir in peanut butter and mashed bananas and beat until the mixture is light and fluffy 3. Whisk eggs together in a small bowl for a few seconds, then gradually add to mixture, beating continually 4. Sift in flour and fold gently into the mix 5. Divide mixture ito muffin cases, about three quarters full 5. Bake in oven for 20-25mins or until risen and golden
