Cumberland Pie with Luxury, Cheddar Mash

The nights are drawing in and soon there\\\'ll be that familiar chill in the air. Yes, autumn\\\'s upon us. So after a hard day\\\'s work, why not kick back and relax with this gorgeous, satisfying, British classic?

For the mashed potato 

1kg/ 2lb 3oz potatoes, peeled and cut into chunks. I find Maris Pipers are great for mashed potatoes 
50/60g (or more, if you like) butter, cubed
1-2 tablespoons double cream
150g (Or again, more if you prefer) of extra mature,cheddar cheese, grated

For the meat mixture 

1 tablespoon of olive oil 
1 medium onion, chopped 
2 medium carrots, peeled and thinly sliced
500g minced beef 
1 beef stock cube
2 heaped teaspoons, of beef gravy granules (You can never have too much flavour!)
100ml boiled water
1 level teaspoon of dried rosemary, although you\'re welcome to use fresh, if you prefer 
Pre heat oven to 190c conventional electric oven /170c fan assisted oven / gas mark 5 Put the potatoes on to boil. When they\\\'re done, they should be soft enough to place a sharp knife effortlessly...
