Curried Lentil Burgers With Carrot And Coriander

Flavor-packed vegetarian burgers . Perfect with crunchy slaw.

1 cup red lentils, rinsed
2 medium carrots, grated
1 medium onion, finely diced
1½ cups rolled oats (not instant)
2 tablespoons medium curry powder
½ teaspoon black pepper
2 cups vegetable stock
1 medium egg, beaten
1 handful coriander leaves
1 teaspoon olive oil or coconut oil
