Curried Pork with Greek Yogurt and Apples

A very fast and simple, but totally delicious Curry.

1 pound lean pork, diced
1 tablespoon vegetable oil
2 big red apples, peeled, chopped
2 chopped red onions
2 tablespoons all purpose flour
2 heaped teaspoons curry powder
1/4 teaspoon sea salt
1/4 teaspoon ground ginger
1/4 teaspoon garlic powder
2 cup natural chicken broth
1 tablespoon lemon juice
hot cooked chinese long rice
1 tablespoon vegetable oil
2 big red apples, peeled, chopped
2 chopped red onions
2 tablespoons all purpose flour
2 heaped teaspoons curry powder
1/4 teaspoon sea salt
1/4 teaspoon ground ginger
1/4 teaspoon garlic powder
2 cup natural chicken broth
1 tablespoon lemon juice
hot cooked chinese long rice
In a large non stick pan or skillet, heat oil over medium heat. Brown the diced pork well and add apples and chopped onions; brown them lightly. Add the flour and curry powder; stir well. Stir in remaining ingredients from the list. Cover and let it all simmer for 35 to 45 minutes over medium-low heat. Serve on top steaming chinese long rice, and topped with 2 heaped tablespoons of yogurt.
