Bite-sized carrots with the perfect combination of sweet and spicy flavors. The curry powder makes these Easy Roasted Curried Carrots the perfect side dish!

2 lbs. fresh carrots ( peeled and cut on the diagonal )
1 T. extra virgin olive oil
2 T. honey ( preferably local )
1 T. curry powder
10-12 thyme sprigs ( fresh )
to taste sea salt
to taste black pepper
