Cupcakes made with Hershey's Special Dark Cocoa and ginger then topped with a vanilla mascarpone frosting.

For the cupcakes

2 cups sugar
2 cups all purpose flour
3/4 cup Hershey's Special Dark Cocoa
1 1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup dark molasses
1/4 cup vegetable oil
1 cup boiling water

For the frosting

8 oz. mascarpone cheese
8 tablespoons (1 stick) unsalted butter, softened
4 cups powdered sugar
2 tablespoons eggnog (or milk)
2 teaspoons vanilla bean paste (or pure vanilla extract)
