These delicious cookies are filled with minty goodness! A perfect treat that's also deliciously good for you!

For the Cookies:

1 1/2 cup brown rice flour
1/2 tsp xanthum gum or baking powder
1 tsp salt
1 cup butter, softened
1 cup coconut sugar*
1 1/2 tsp pure vanilla extract
2 tablespoons milk
1 cup unsweetened cocoa

Peppermint Coating:

2 1/2 cups Scharffen Berger semisweet dark chocolate baking chunks
2 tsp pure peppermint extract

Ganache Filling:

1/4 cup coconut cream (see directions)
1 cup Scharffen Berger semisweet dark chocolate baking chunks
1 tsp pure peppermint extract

Ancho Chili powder (optional)

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
