A delicious ethnic cuisine with wonderful flavors.

8 oz. straight cut rice noodles
4 tbsp. dark-brown sugar
4 tbsp. fresh lime juice, plus wedges for serving
3 tbsp. soy sauce
2 tsp. vegetable oil
3 scallions, white and green parts separated and thinly sliced
1 garlic clove, minced
2 large eggs (optional) lightly beaten
1/2 c. fresh cilantro
1/4 c. chopped, roasted, salted peanuts
2 c. chicken, sliced into small strips (optional)
1 c. shrimp, cooked, peeled, de-veined (optional)
