Mini Denver Omelets baked in a Pampered Chef Brownie Pan

12 medium eggs, beaten
6 oz Velveeta Cheese, divided into twelve 1/2 oz cubes
1/3 c chopped onions
1/3 c chopped mushrooms
1/3 c chopped ham
salt and pepper to taste
Lightly grease brownie pan. Divide beaten eggs equally between the 12 cups. Sprinkle each cup with onions, mushrooms and ham. Drop a Velveeta cube into each cup. Salt and pepper as desired. Bake at 325 for about 20 minutes or until eggs are set.
