Don’t Bale on Kale Salad is healthy and tastes AMAZING! Surprising crunchy, sweet and tart ingredients that make this the best kale salad you’ve ever tried!

For the vinaigrette:
½ cup peanut oil
2 Tablespoons toasted sesame oil
3 Tablespoons seasoned rice wine vinegar
1½ tablespoons soy sauce
2 tablespoons honey
Dash of cayenne pepper
1 teaspoon red pepper flakes
1 teaspoon Aji-Mirin (or Sherry cooking wine plus 1 teaspoon sugar)
For the salad:
4 heaping cups finely chopped kale (from one small bunch baby kale, leaves washed and de-stemmed)
1½ cup finely slivered green cabbage
¼ cup chopped cilantro
¼ cup chopped fresh mint
3 scallions, chopped
¾ cup whole kernel sweet corn
½ cup pomegranate seeds
4 tablespoons Parmesan cheese, micro planed
3 tablespoons chopped peanuts (I use roasted salted peanuts)
