Double Cherry Chocolate Cupcakes

These cupcakes have a nice soft and velvety chiocolate texture, which is beautifully accented by the tartness of cherries and cherry jam.

For the batter:
120g dark chocolate
85g butter, softened
175g Brown sugar
2 large eggs, separated
185g all purpose flour
¾ tsp baking powder
¾ tsp baking soda
a pinch of salt
250 ml milk
1 tsp vanilla extract
½ cup cherry jam (optional)
1 cup cherries (pitted). Thaw if use frozen cherries.
Amaretto liquor (optional, skip if cooking for kids) 1 tbsp

For the chocolate ganashe:

100g dark chocolate
¾ cup heavy cream

For decoration (optional):
Fresh cherries or other berries
