Chocolate Mascarpone Brownies
1 cup (2 sticks) butter, unsalted
3 ounces semi-sweet or milk chocolate chocolate, chopped (good quality)
1 cup sugar
1/2 cup unsweetened cocoa powder
1/2 cup mascarpone cheese, at room temperature
3 eggs, room temperature
2 teaspoons vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon salt
Chocolate Mascarpone Frosting
2 oz mascarpone, room temperature
1/4 cup unsalted butter, room temperature
1/4 cup cocoa
2 cups confectioner’s sugar
1 teaspoon vanilla extract
Pinch of salt
1-2 tablespoons cream or milk, to adjust consistency
Keep refrigerated for up to 1 week.
