Double Chocolate Zucchini Muffins

A healthy choice for breakfast and snacking. Disguise your veggies with some delicious chocolate in a rich, moist muffin!

3/4 cup vegetable oil
1 cup sugar
1 cup brown sugar
4 tsp vanilla
3 cups shredded zucchini
1 cup oat flour
2 cups white flour
3/4 cup cocoa
1 tsp baking soda
2 tsp baking powder
1 tsp salt
2 cups semi-sweet chocolate chips

Marinated Taro Root

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
