2
Banana-based cookies make a healthy snack.
8
1 banana
¼ cup almond
¼ cup walnut
1 tablespoon coconut flakes
¼ cup bread crumb
½ tablespoon lemon juice
½ teaspoon lemon zest
1 teaspoon honey
¼ cup almond
¼ cup walnut
1 tablespoon coconut flakes
¼ cup bread crumb
½ tablespoon lemon juice
½ teaspoon lemon zest
1 teaspoon honey
Preheat oven to 350 degree Fahrenheit.
Peel and cut banana into segments.
Put banana, almond, walnut and coconut into a blender and mix.
Pour banana dough into a bowl. Add lemon juice, lemon zest and honey. Add bread crumb little by little, slowly mixt it in, until the dough is sticky but not dry. Add more bread crumb if too wet.
Oil a baking dish. For each cookie, drop a spoonful of banana dough onto the baking dish. Leave at least 1 inch of space between the cookies.
Bake for about 10 minutes or until the surface is a little dry.
Garnish with Goji berries or dried fruits.
Note: You can also let the cookies air-dry. All the ingredients are edible without baking.
