Easy Carrot Cake Recipe- Raw Vegan

Healthy Carrot Cake recipe that you can make as a cake, balls or cookies.

1/2 cup carrots
1/2 cup dates
1/2 cup dried mulberries
1/2 cup raw oat flour ( raw oats ground into flour)
1/4 tsp vanilla
1/4-1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup unsweetened coconut- more if incorporating into the dough as well.
Place carrots and dates in food processor. Add the mulberries and oat flour and process until a dough is formed. Add vanilla and spices (coconut if using in dough) Shape into balls and roll in coconut Store in refrigerator
