Easy Cheesy Broccoli Soup

This Easy Cheesy Broccoli Soup is the perfect meal for a cold day. It\\\'s great in the summer, too, for those who love soup all year \\\'round. The broccoli adds nutrition, while the cheese adds a wonderful flavor. Easy Cheesy Broccoli Soup is sure to become one of your favorites!

8 cups chicken broth
1 large onion, peeled and chopped
4 carrots, peeled and sliced
2 stalks celery, chopped
1 large head of broccoli
1 envelope dry chicken noodle soup
1/4 teaspoon garlic powder
2 cups egg noodles
1 1/2 cups half and half cream
8 ounces of Velveeta cheese or Cheese Whiz, or more if desired
Boil onion, carrots, and celery in broth for 7 minutes. (Yup, make \\\'em heavenly by boiling the heck out of \\\'em!) Add broccoli, and cook until broccoli is firm but tender. Add dry soup mix, garlic powder, and egg noodles. Stir. Simmer until egg noddles are al dente, about 7 minutes. (\\\"Al dente\\\" is supposedly Italian for, \\\"Not-a too soft, and not-a too crunchy.\\\") Turn heat off. Add half-and-half and cheese. Stir to blend. Add pepper to taste. Heat for a few minutes on low, if needed. Serve in soup bowl or in a buttered bread bowl, with a little cheese sprinkled on top. (NOTE: No salt needed while cooking, as there\\\'s salt in some of the ingredients.)
