Easy Chicken Noodle Soup

This soup comes together really quickly and has great flavor. Great for a cold day or just a day you need some comfort food!

1 lb boneless skinless chicken breasts, sliced thinly
32 oz chicken stock, at least. Probably more like 48 oz (I typically use Kitchen Basics)
6 small red skin potatoes, diced
1 medium carrot, diced
1 celery heart, diced
1 small onion, diced
6 oz (half a bag) wide egg noodles
palm full (about 1 Tablespoon) poultry seasoning
1 teaspoon lemon pepper
1 teaspoon Montreal chicken seasoning
1.5 Tablespoons butter
1 Tablespoon (or so - about a turn of the pan) olive oil
bay leaf
salt & pepper to taste
Start by prepping all the veggies and chicken. I like to do the veggies first, so the cutting board doesn't have chicken germs on it. Dice the onion, potatoes, celery, and carrot into similar sized pieces....
