Quick and easy apple bread- perfect for fall!

3 medium apples, grated (with skin)
2 C sugar
1 1/4 C oil
2 eggs
3 C flour
1 tsp. salt
1 1/2 tsp baking soda
2 tsp cinnamon
1 tsp vanilla
1 C chopped nuts (optional)

Mix sugar, oil, and eggs. Add grated apples. Stir in dry ingredients and mix well. Stir in nuts and vanilla. Bake in 2 well greased loaf pans for 1 hour at 350 degrees.
