Easy Corn Bread (eggless)

For those who cannot or do not eat eggs, this one is for you! It is a keeper!

1 cup cornmeal (white or yellow)
1 1/4 cups unbleached all purpose flour
1/4 cup sugar
1 tbsp baking powder
1/2 tsp baking soda
1 tbsp corn syrup
1/2 tsp salt
1 1/4 cups milk
2 tbsp white vinegar
1/2 cup vegetable oil
1. Preheat oven to 375 degrees Fahrenheit. Light butter (or cooking spray) an 8x8-inch square pan. Set aside. 2. In a large bowl, combine all the ingredients. Stir until just mixed with a wooden spoon. 3. Pour into prepared pan and bake for 20-25 minutes, or until golden. 4. Set pan on wire rack and cool for 15 minutes. Variation: you can add 1/2 cup drained canned corn.
