Easy Gluten Free Fruit Muffin

These muffins are fast, easy, and perfect for little helpers in the kitchen. The recipe itself is gluten free with sugar free alternatives mentioned.

1 Egg
2 Cups Gluten Free Pancake mix
1/3 cup sugar (splenda or agave also works)
2/3 cup milk
2 tbs vegtable oil
1 cup chopped fruit of your choice (bananas, apples and strawberries all work great)
Combine all ingredients but the fruit. Mix well, then gently stir in the fruit. Bake at 400 between 15 and 18 minutes.
