Easy Healthy Vegetable Lasagne

Lasagne is one of my favorite foods, but it can be a bit heavy (especially in the Summer!) and time consuming to prepare. This recipe is a wonderful way to not have to give it up when I\\\'m watching what I eat! This recipe includes plenty of vegetables, lighter cheeses and is quick and easy to prepare. It makes six satisfying servings. In this recipe, I used broccoli, mushrooms and carrots, but feel free to substitute any vegetables you\\\'d like!

Non-stick cooking spray
28-oz. jar of your favorite pasta sauce
6 uncooked no-boil lasagne noodles
15-oz. part-skim ricotta cheese
1 cup chopped raw carrots
1 cup chopped raw broccoli
1 cup chopped raw mushrooms
8-oz. shredded part-skim mozzarella cheese
