Easy pasta with veggies

2 T. olive oil
4 garlic cloves, minced
1 cup brussels sprouts, washed well and cut in half
1/4 cup diced red or yellow bell pepper
1 brown onion diced
1 jalapeno pepper minced (optional)
1 cup cremini mushrooms cut in half
1/4 tsp. salt
1/4 tsp. pepper
1 Tbsp. basil
1/4 cup chopped parsley reserve a little for garnish

Any seasonal vegetables work in this recipe: fresh peas, broccoli flowerets, green beans, etc)

8 oz. linguini pasta
1/4 cup lemon juice
zest of 1/2 a lemon
1/2 cup grated parmesan cheese
1/2 cup whole milk or half & half (add more if needed to thin sauce)
In large skillet heat oil over med heat, add garlic, brussels sprouts, onions, peppers, jalapeno pepper. Cook approx 5 minutes. Add mushrooms, basil, some of the parsley, salt and pepper. Add milk, lemon juice, lemon zest, and parmesan cheese. Cook and reduce by 1/3. At this point you can add more milk if your sauce is too thick. Cook pasta in heavily salted boiling water according to package directions. Drain. Plate pasta, add vegetable sauce and garnish with parsley. Yummy with a Chicken breast filet or Salmon Filet.
