Easy Quiche Lorraine

Pastry- based quiches,flans and tarts make ideal lunchtime dishes as they are easy to prepare,quick to cook light in texture and delicious.The classic French egg and bacon tart,quiche Lorraine has numerous variations.This version includes sausage pieces and cheese among its ingredients to add flavor.You could add or mix and match ingredients of your choice really.

1/2 to 3/4 cup unsmoked streaky bacon,rinds removed and chopped
Shortcrust pastry flan case( as needed)
2 whole eggs
2 sausages or frankfurters-chopped into little pieces
2 egg yolks
1/2 cup fresh single cream
About 1/2 cup milk
Salt and freshly ground black pepper
1/4 Gruyere cheese,grated
Fry the bacon over gentle heat in a small frying pan until the fat runs and the bacon becomes golden- brown.Put the bacon into the flan case,add chopped sausage pieces.Beat the whole eggs,egg yolks and cream together lightly in a bowl and pour over the sausage and bacon.Stir in enough milk almost to fill the case.Season to taste with salt and pepper and sprinkle with grated cheese. Bake in a fairly hot oven ( 190 C/ 375 F Or Gas Mark 5 ) for 25-30 mins or until lightly golden brown on the edges.
