Here is an easy refrigerator pickle recipe that my family loves. Planted in our container gardens is a sweet little cucumber called a lunch box cucumber. With a bumper crop of them we had to come up with a way to use them and I wanted something fast, easy and delicious. This recipe solves that and is awesome! They are slightly sweet, with a little kick! These pickles find their way on to our hamburgers - of course, but don't stop there! Throw it on a turkey sandwich - ahhhhmazing.T

6 cups thinly sliced pickling cucumbers (about 2 pounds) used lunchbox cucumbers enough to fill my bowl, not sure if it was 6 cups or totaled 2 pounds!

2 cups thinly sliced onion I just used one "hamburger" onion

Sliced the cucumbers and onions in my food processor - fast and easy!

1 1/2 cups white vinegar

3/4 cup sugar I went on the light side of 3/4 cup

3/4 teaspoon salt I used kosher salt

1/2 teaspoon mustard seeds

1/2 teaspoon celery seeds

1/2 teaspoon ground turmeric

1/2 teaspoon crushed red pepper (or less) I used a little less

1/4 teaspoon freshly ground black pepper

4 garlic cloves, thinly sliced Preparation
