Easy Shrimp and Corn Chowder

A hearty seafood soup that\\\'s ready in less than 30 minutes!

1 tablespoon olive oil
1 medium onion, chopped
1 red or yellow pepper, chopped
1 cup celery, chopped
1 clove garlic, minced
6 cups chicken broth
1/2 teaspoon dried thyme
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1 (12 oz.) bag frozen corn, thawed (about 2 cups)
1/2 cup all-purpose flour
2 cups heavy whipping cream
1 cup shredded fontina cheese
1 1/2 pounds fully cooked, frozen shrimp, thawed
Salt and pepper, to taste
1-2 tablespoons lemon juice
1/4 cup fresh parsley, chopped
