Easy Texas Caviar

A simple recipe that is hearty and a great dip for parties or family gatherings.

3 ounces of onion diced fine
2 ounces celery diced fine
2 cloves of garlic minced
8 ounces diced tomato
24 ounces black-eyed peas (drained)
2 ounces jalapenos diced fine
3 ounces cilantro freshly chopped very fine
2 ounces of bell pepper diced fine
1 level teaspoon each of salt, black pepper, and oregano
1 ounce each of olive oil and vinegar (either red wine or white)
Mix all of the ingredients in a large bowl, cover and refrigerate for at least 4 hours before serving chilled with nachos, fresh bread or soft tortillas.
