1 tbsp olive oil
3 ribs celery, sliced
½ large onion, chopped
1 cup sliced cremini mushrooms
1½ cups wild rice, rinsed
6 cups chicken stock
1 (8 oz) can sliced water chestnuts
1 tsp garlic powder
1 tsp dried thyme
1 tsp salt
½ tsp black pepper
¼ cup fresh parsley, finely chopped
