Eggplant Lamb Burgers - A gluten-free, Greek inspired burger with bold, classic Mediterranean flavors and topped with tahini yogurt sauce.

LAMB BURGERS
1 lb. ground lamb
½ cup feta cheese (2 ounces)
½ cup cooked wild rice, cooled (see note below)
1 small onion, finely chopped
¼ cup zante currants
1 egg
2 tablespoons heavy cream
2 tablespoons fresh parsley, finely chopped
1 teaspoon cumin
½ teaspoon cinnamon
1 teaspoon salt
¼ teaspoon pepper
Pinch cayenne pepper
1 tomato, sliced
4 lettuce leaves
EGGPLANT
1 large globe eggplant cut into ½ inch thick slices
1 tablespoon olive oil
½ teaspoon salt
TAHINI YOGURT SAUCE
¼ cup plain Greek yogurt, ful fat
¼ cup tahini
1 tablespoon olive oil
1 clove garlic, minced
2 tablespoons freshly squeezed lemon juice

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
