2 large eggplants, about 2 pounds, thickly sliced
2 cups panko bread crumbs
1/2 cup flour
1 cup egg substitute (or 4 large eggs lightly beaten)
3 tablespoons sweet paprika, divided
1 teaspoon garlic salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
4 teaspoons extra virgin olive oil
1 cup fat free half and half
1 1/2 tablespoons all-purpose flour
dash of nutmeg
