So good on garlic toasts or gourmet cracker. I toasted some sourdough slices and put some garlic cheese on it. Then, I added a dollop of the spread on top and it made for a tasty game day snack.

4 Small eggplant (ends trimmed off and diced)
6oz jarred sun dried tomatoes (packed in olive oil)
3 cloves roasted garlic
4 tablespoons tomato paste (mixed with 1 cup of water)
salt & pepper to taste
crushed red pepper flakes to taste

Preheat the oven to 375 degrees.
