Egyptian Feta Cucumber Salad

An easy, healthy Egyptian cucumber salad recipe from Seduction in the Kitchen.

2 cucumbers
1/4 cup scallions, thinly sliced
4 oz feta cheese
2 tablespoons lemon juice
1 teaspoon of olive oil
1 tablespoon a fresh chopped mint
salt and pepper to taste
Slice the cucumbers and scallions, and chop the mint. Toss with crumbled feta cheese. Whisk together the olive oil and lemon juice, then toss with the salad. Add sea salt and freshly ground black pepper to taste.
