One of our favorite taco joints here in KC is called Taco Republic. It is a casual place that is appropriate for kids (and has kid friendly Mexican food options) but also has gourmet street tacos and sides for those who are more adventurous. Last time we ate at Taco Republic we got a side of Elote (corn - pronounced ey (as in hey)-low-tay) and it was delicious! 32 oz. frozen corn
2 T. mayonnaise (I used canola mayo)
1/4 c. light sour cream (could also use plain yogurt)
1 c. shredded Parmesan cheese
2 t. chili powder
1 1/2 t. salt
1/2 t. pepper
1/2 c. cilantro, chopped
Juice of 2 limes
