Fairly Viscous BBQ Sauce

This tomato paste based BBQ sauce has a full-bodied flavor with a touch of fire. The best advice I can give about making BBQ sauce is that many of the ingredients can be added to taste. This is my basic recipe, but each time I make it, it changes. I use this recipe for pulled pork/chicken sandwiches and BBQ ribs.

cooking oil
3/4 C minced onion
2 tbs minced garlic
2-1/4 C water
2 small cans of tomato paste
3/4 C apple cider vinegar
3/4 cup brown sugar
3 tbsp of honey
5 tbs Worcestershire sauce
5 tbs low sodium soy sauce
The following ingredients can be added to taste:
2+ tsp liquid smoke
3+ tbs Fireball whiskey
1/4+ tsp paprika
2-1/2+ tbs molasses
2+ tsp red chile pepper flakes
Salt and pepper
Cook onions and garlic in oil for about 5 minutes in a medium sauce pan over medium heat. Stir in water, tomato paste, vinegar, brown sugar, honey, Worcestershire sauce, and soy sauce. Season with remaining ingredients to taste. Bring mixture to a boil, reduce heat and simmer for about 1-1/2 hours uncovered, stirring occasionally. Feel free to taste the mixture while it is simmering. The flavors tend to change, and you may want to adjust seasoning as you think is necessary.
