Family Favorite Spaghetti Carbonara

A wonderfully creamy pasta featuring parmesan and romano cheeses blended with savory bacon

1/2 lb bacon
1 lb spaghetti
1 clove garlic, minced
1/2 cup olive oil
5 eggs, well-beaten
1/3 cup grated Parmesan cheese
1/3 cup grated Romano cheese
freshly ground black pepper
Cook bacon until brown; drain and crumble. Combine eggs, cheeses & pepper to taste in a medium mixing bowl. Set aside. Cook spaghetti in a large pot of boiling water, until tender but still firm, 8-10 min; drain. Use the now empty spaghetti pot to cook garlic in oil until golden. Add cooked spaghetti and crumbled bacon, toss to coat. Remove from heat. Slowly add egg mixture to spaghetti; stirring constantly. Serve immediately. Pass additional Parmesan or Romano cheese.
