Family Style Spinach Manicotti

Spinach is one of my favorite leafy greens and I love adding it to pasta dishes. My kids love this recipe too, so a bonus that I can get them to eat spinach even if it is masked in gooey cheese and a tangy tomato sauce. With just me, my husband and two preschoolers we get two to three meals from this recipe.

10 cups of bolognese sauce
1 eight ounce package of cooked manicotti pasta (14 count)
2 t oregano
2 eggs
30 oz ricotta
1½ c parmigiana
2 c mozzarella
16 oz of frozen spinach thawed and drained
salt and pepper to taste

Boil the manicotti and have it ready, I like to have mine al dente, so as not to overcook it in the oven
Make sure your sauce is ready to go too, I had minced turkey and Italian turkey sausage in mine
