These quick and easy pizzas are a healthy and delicious way to use the vegetables from your farmers market or garden.

6 (8 inch) flour tortillas
1-2 tablespoons olive oil
Salt and pepper
3/4 cup pizza sauce or pesto
Toppings:
Fresh spinach, chopped
Zucchini, thinly sliced and roasted
Cherry tomatoes, halved
Red onion, thinly sliced
Green onion, chopped
Sun dried tomatoes
Artichoke hearts, chopped
Sliced olives
Garlic, minced or chopped
Parmesan cheese, grated
Feta cheese, crumbled
Fresh basil, chopped
1-2 tablespoons olive oil
Salt and pepper
