Fast & Easy Individual Chicken Pot Pies

Who doesn't love the comfort of a warm satisfying chicken pot pie? Take the one from your childhood and transform it into a grown up, almost gourmet, meal!

2 boneless, skinless chicken breast
1 sheet of puff pastry
veggies of choice I used diced carrots (3) and celery (4 stalks)
2 cups chicken stock or water
Dice the chicken and veggies and simmer in the chicken stock on the stove top until done. Roll out the puff pastry and cut into individual serving sizes. Layer the squares you created on top of each other...
